Galettes Bretonnes * RECIPE | Goat cheese and eggs

Hello everybody,
if you've been here for a while you probably know that I've spent 4 months of my life in Saumur France this year, it was a great experience that allowed to experience french culture on a completely different level. I'm very thankful that I got to spent my 4 months in a great host family that was very welcoming and nice to me. Thanks to them I have learnt a couple of french recipes that I'd like to share with you ! Today it's going to be a recipe for classic galettes Bretonnes. These are basically salty crêpes that come from the northern region of France called Bretagne. They are very easy to make and can be adjusted to everyone's liking, so let's get to the ingredients :)

For the galettes:
330 g of buckwheat flour
5 g of salt
750 ml of water
1 egg
butter

The toppings(the most traditional):
goat cheese
ham
eggs
pepper
mushrooms
grated cheese

For the toppings, be creative and try different combinations of things that you love and enjoy !

First start by mixing the flour, salt and an egg together.
Slowly start pouring the water in and mix really well, you want to get a nice smooth consistency without lumps. If you encounter any lumps, press them in between your fingers and you should be just okay. The consistency should be close to pancake batter.


When you're done you can either leave the mixture in the fridge until you decide to make your galettes or you can start straight away, I don't think that leaving it in the fridge changes the consistency dramatically, just make sure to mix well the mixture before using it because the flour and water may separate a little bit.


Now prepare a pan for your galettes, choose whatever size you want it really doesn't matter. Now depending on the chosen size pour in some of the mixture so that you create a thin galette. You don't want to use a lot of the batter because you galette would turn out too thick and it would be too hard to flip.

Now cook for a couple minutes until one of the sides doesn't look liquidy. When you think you're done you can flip the galette and start to do the magic !

First choice you have to make is what is your preferred egg style, you can either scramble the egg on your galette or you can leave it just like a traditional fried egg on top of your galette. So after you've put the egg in it's time to add all the toppings that you can possibly imagine my favorite combination is some goat cheese, grated cheese and some pepper to taste. But if you want to stay traditional don't forget to add some ham on top of your galettes as well.


Leave your egg to cook for a couple minutes, and when everything is nicely blended and cooked through you can enjoy your traditional french meal.

In France galettes are normally served with some cider, another nice thing to go with the galettes is a salad, it gives the meal a little bit of freshness.
