Apple Pie * RECIPE |

Hello friends !
what a wonderful month has come, the month of June, not only my birthday is in June but it's the last day of school, basically it's my favorite month. In celebration of June starting I have a super delicious recipe for you, for my traditional apple pie. I know, i know pies are better suited for autumn probably but I like to eat christmas food in summer so whatever. Anyways, this recipe is quite easy to make and will definitely bring you that grandma pie feelings !

For this recipe you'll need:
Crust
3 cups whole wheat flour
1/2 cup of melted coconut oil
1 cup of milk
1 tsp of cinnamon
1/2 tsp of salt

Filling
250 g of Ricotta cheese
1 egg
7 apples
1 tbsp of cinnamon
5-6 tbsp of coconut sugar

You're going to start with the crust, mix all of the dry ingredients together, then add the melted coconut with the milk and mix until a thick dough that isn't sticky forms. Split the dough into two parts and set aside.


Now we can move to the filling. This filling consists of two parts, one that's creamy and an apple one. First we're going to make the creamy one, so start by whisking together the cheese, 1 egg and 2-3 tbsp of coconut sugar. Whisk until smooth and creamy.


For the apple filling you're going to start by peeling the apples and cutting them into small pieces. The in a big bowl mix all of the apples with the rest of the coconut sugar (3 tbsp) and the cinnamon.


When both of your fillings are ready, you can start assembling your cake. Roll out the first half of the dough to fit inside your 9 inch round pan. Cut away the excess and place the dough into your form. Press the dough inside and fill it with the creamy filling that we've made earlier.

On top of the creamy layer, place all of the apples.


Now roll the rest of the dough and cut it into thin stripes that you're going to start placing on top of your pie. You can create any pattern you want, I went with a simple checked pattern. I had some left over dough so I just added a little trim around the edges, just to make it a little fancier.


And that's it, now just bake on 350° for 45 minutes (keep checking the cake every couple minutes just to make sure).

Your pie is ready to be served, serve hot or cold depending on your taste but I can assure you that it tastes the best while still fresh from the oven ! You can add a little bit of cinnamon on top if you are a cinnamon lover as I am !
