Apple Carrot Cake * RECIPE |

Hello guys,
today I have a recipe for another dessert for you, it's going to be for one of my favorite cakes ever. My Apple Carrot cake, a lot of time I see amazing recipes for carrot cakes but I don't see a lot of recipes that would include carrots and apples at the same time, So I decided to bring you mine that combines these two amazing ingredients to create a moist rich and flavorful cake that will be loved by everyone. Let's go right to the ingredients.



Makes 12 servings each having 317 calories

Ingredients:
300 g of carrots
120 g of apples
220 g of brown sugar
175 g of wholewheat flour or coconut flour
2 tsp of vanilla sugar
1 tsp of baking powder
1/2 tsp of baking soda
1 tsp of ground cinnamon
4 tbsp of shredded unsweetened coconut
100 ml of oil
5 eggs
100 g of grounded nuts of your choice

Preheat your oven to 170 °C.

First you're going to start by peeling your carrots and cutting your apples, then in a food processor or a grater go ahead and grate all of your apples and carrots. Along with your apple and carrots make sure to ground your nuts in to almost a powder consistency leaving some bigger pieces for the texture.


Second step that you'll want to do is to separate egg yolks and egg whites in to 2 separate bowls. Then take your electric whisk and whisk the egg whites until you obtain a foamy consistency. This is going to make the cake fluffy and moist. Then mix the egg yolks with brown sugar until well combined.



Now it's time to assembly everything, start by mixing your egg yolks and sugar mixture with carrots, apples, flour, baking powder, baking soda, ground cinnamon, oil, coconut and your grounded nuts and mix well.


When you're satisfied with the results carefully mix in the egg whites, make sure not to use any electric device during this last step because it would be too harsh for the batter and your cake wouldn't came out as fluffy as it should.


After your egg whites are well combined you can pour the mixture into your cake mould. I'm using a silicone one so I'm not using anything to grease it up, but if you're using a metal form I would suggest greasing your form up with a little bit of butter and then a little bit of shredded coconut just to make sure it won't stick to your form.


Last step is to put it into your even and let it bake for about 60 minutes checking every 20 minutes just to make sure that your cake is baking properly and not getting burnt or something similar. To make sure that your cake is ready and done all the way through use a toothpick and check if the middle of the cake isn't liquid or sticky, your toothpick should be quite dry when getting out of the cake.


That's it your Apple Carrot cake is done and ready to be served. If you'd like to give it something extra mix up some cream cheese and create a cream cheese frosting to make it a bit more appealing to look at, you can also use some nuts on top of your cake to make it extra fancy.
