Tarte au chèvre et tomates * RECIPE | Vegetarian

Hello guys,
today I have another recipe for you, this time it's going to be for something special that I ate in France almost every single week and that is my Tarte au chèvre et tomates or we can also call it a Quiche, I just prefer to call it Tarte because it's not the traditional Quiche Lorraine that most people know. This recipe is vegetarian friendly and also includes wholewheat flour instead of regular one. I just finished baking it so let's get to the ingredients so you can prepare one Tarte for yourself too !


For 1 Tarte that serves 4 people you'll need:
For the pastry:
250 g of wholewheat flour
170 g of butter
6-7 tbsp of water
1/2 tsp of salt

For the filling:
2 eggs
180 ml of whipping cream
2 tsp of herbs de provence (thyme, oregano, basil)
2 tbsp of corn
5 cherry tomatoes
1/4 cup of shredded Parmigiano Reggiano
150 g of goat cheese

So I started of by preparing my pastry dough by mixing flour and salt together and then by adding butter that was previously cut into small cubes.

Now it's time to use your hands and a lot of force, you're going to start combining the butter with the flour, the heat of your hands is going to help the flour to stick to the butter a little better. If you find it too hard go ahead and add water start with 6 spoons, and if still too powdery add another one. Mine was fine with 6 spoons, it depends on the flour you're using. At the end you should get something like this.

Wrap the dough and put it in the fridge for at least 30 minutes, I left it there overnight and it worked completely fine, you just have to let it sit on sun for a couple minutes because the butter in the dough is going to harden a lot.
Second step is to roll out your dough so that it is couple mm thick about 5 mm maybe, if you like your tarte a little more crispy you can go with an even thinner dough.

Now put it into your form that should be covered in butter.

Make sure to press out any air bubbles and cut away the excess dough you can use the rest to make a small tartelette maybe :)

Third step is to prepare your egg mixture and assembly your tarte. Start of by beating your eggs into a bowl, add your whipping cream and whisk well. Now you're going to cut your tomatoes and goat cheese in circles and put it on your pastry, choose any pattern you want continue by adding corn.


Then pour in your egg mixture and top it off with some shredded Parmigiano and herbs. Now your Tarte is done and ready to go to the oven.




Preheat your oven to 180 ºC (356 ºF) and bake your Tarte for at least 30 minutes or until the top starts to get golden and solid, there should be no liquid by the time you take the Tarte out of the oven.

That's it your Tarte is ready to be served, this is such a customizable recipe you can add some bacon or something else that you like even some tuna would be nice ! Feel free to experiment a little bit. One thing that I think goes amazingly with any type of Tarte you'll do is a bowl of nice green salad with a classic vinaigrette (salt, sugar, vinegar, water).
