Red Lentil Curry * RECIPE |

Hello :)
After a little while I'm bringing you another recipe that has become a staple in my life when it comes to a quick easy meal that basically cooks itself. I'm talking about my red lentil curry that includes just couple ingredients and it's ready in about 20 minutes. The best part about this recipe is that almost everyone can enjoy because it's vegan, so there's no meat, no diary and gluten free also ! So let's get to the ingredients.



500 g of red lentils
2 tomatoes
1 carrot
0,5 l of water (or more if needed)
1 onion
4 cloves of garlic
some oil
1 tbsp of curry powder
2 tbsp of soy sauce
salt up to taste

this makes about 4 servings or more depending on how much you eat :)

Start off by cutting your onion in to small pieces and then with your minced garlic you're going to add it to your pot with a little bit of oil. Then add the curry powder and pre washed lentils in to the pot also and let it on high heat for about 3 minutes or until the onion starts to get golden. Now you're just going add the water to the mixture so that it covers all the lentils. Bring water to a boil and then switch to medium heat. It takes about 15 minutes until the lentils start to soften up and create a paste like consistency about a half way in that means after 7 minutes add your chopped tomatoes and carrots to the mixture and let it cook for another 7 minutes. Keep checking if there's some water in the pot because sometimes the lentils will absorb it all and then you risk getting your lentils burnt. After 15 minutes check your lentils and according to the desired consistency turn it off or continue cooking. When I was doing this recipe for the first it took nearly half an hour for my lentils to get tender so don't worry if they're still a little stiff after 15 minutes just make sure there's enough water in the pot and you can continue cooking them until tender. Don't forget to add salt up to your taste. Now you're ready to serve this easy, quick and healthy dish that everyone will love for its simplicity and flavor.
